How long have you dreamed of getting your life together, making breakfast, starting the day on a positive note but, you end up being late and having a bad day? Breakfast being the most important meal of the day is the one you are most lazy to make after a good night’s rest, especially if you are not a morning person.
Breakfast preparation has evolved into getting everything ready the night before making it ready to eat on heating/cooking. This practice is becoming the go to for everyone including me.
Pancakes have been my go-to breakfasts ever since I had it the first time. I love topping mine with Nutella or dark chocolate ganache and fresh strawberries and kiwi. It always pleases my soul and gives me the satisfaction of making my own breakfast.
Today I will be sharing a very quick, easy and delicious recipe which is one of my favorite comfort foods! Here is the recipe to the most delicious pancakes, which serves 2 people that is quick and easy which can be prepared the night before a busy day!
½ cup buttermilk*
1 small egg
1 tbsp melted butter
½ tsp vanilla essence
1 tbsp sugar
½ cup refined flour
½ tsp baking powder
¼ tsp baking soda
Salt, to taste
*Buttermilk can be made by squeezing ¼ tsp lemon juice or vinegar in ½ cup milk and letting it sit for 5 mins. Buttermilk can also be made using half measure of milk and half measure of beaten yoghurt.
1. Any gluten free flour can be used as a substitute to refined flour.
2. The batter can be stored in the fridge for 2 days (2 servings) in an air tight container.
3. Steel cut oats can also be used in place of flour. You may want to increase the sweetness of the pancake in that case.
